In today’s world, we’re all looking for ways to create delicious, satisfying meals without breaking the bank. At The Lucky Pig, we’ve got you covered with our range of quality meats that are both affordable and full of flavour. We’ve put together four fantastic recipes using our top-notch cuts, each designed to help you beat the cost of living without sacrificing on quality.

Recipe 1: Classic Bolognese with Seasonal Veggies

There’s nothing quite like a comforting bowl of bolognese to warm you up. Using our premium beef mince, this recipe is not only delicious but also easy on the wallet. By incorporating seasonal vegetables like carrots and zucchini, you add extra flavour and nutrients without breaking the bank.

Ingredients:

500g of The Lucky Pig’s premium beef mince
• 2 carrots, diced
• 2 zucchinis, diced
• 1 onion, chopped
• 3 cloves of garlic, minced
• 2 cans of crushed tomatoes (400g each)
• 2 tbsp of tomato paste
• 1 tsp of dried oregano
• Salt and pepper to taste
• Olive oil for cooking

Instructions:

1. Heat a tablespoon of olive oil in a large pan over medium heat. Add the chopped onion and minced garlic, cooking until softened.
2. Add The Lucky Pig’s beef mince, breaking it apart with a spoon, and cook until browned.
3. Mix in the diced carrots and zucchini, cooking for a few more minutes.
4. Add the crushed tomatoes, tomato paste, and oregano. Season with salt and pepper to taste.
5. Let the sauce simmer for 20-30 minutes, allowing the flavours to meld together.
6. Serve over your favourite pasta.

Recipe 2: Mediterranean Chicken Thigh Tray Bake

This Mediterranean-inspired chicken thigh tray bake is both wholesome and economical. By using our succulent chicken thighs, you’ll get tender, juicy meat that pairs perfectly with fresh vegetables and herbs.

Ingredients:

• 3 lots of The Lucky Pig’s chicken thighs, boneless and skin-on
• 4 potatoes, cut into wedges
• 1 red onion, cut into chunks
• 1 red capsicum, sliced
• 200g cherry tomatoes
• 3 cloves of garlic, crushed
• Juice of 1 lemon
• 2 tbsp olive oil
• 1 tsp dried oregano
• Salt and pepper to taste

Instructions:

1. Preheat your oven to 200°C.
2. In a large baking tray, arrange the chicken thighs, potatoes, red onion, capsicum, and cherry tomatoes.
3. In a small bowl, mix the olive oil, lemon juice, crushed garlic, oregano, salt, and pepper. Drizzle this mixture over the chicken and vegetables.
4. Toss everything together to ensure it’s well coated.
5. Bake in the oven for about 40-45 minutes, or until the chicken is cooked through and the vegetables are tender and golden.
6. Serve hot, garnished with fresh herbs if desired.

Recipe 3: Slow-Cooked Pulled Pork Shoulder

This slow-cooked pulled pork shoulder is a crowd-pleaser. It’s tender, juicy, and perfect for sandwiches, tacos, or alongside some simple sides.

Ingredients:

1.2kg of The Lucky Pig’s boneless pork shoulder
• 2 onions, sliced
• 4 cloves of garlic, minced
• 1 cup of chicken stock
• 1/2 cup of barbecue sauce
• 2 tbsp brown sugar
• 1 tbsp smoked paprika
• 1 tsp cumin
• Salt and pepper to taste

Instructions:

1. In a slow cooker, place the sliced onions at the bottom as a bed for the pork.
2. Rub the pork shoulder with brown sugar, smoked paprika, cumin, salt, and pepper.
3. Place the pork shoulder on top of the onions in the slow cooker.
4. Add the minced garlic, chicken stock, and barbecue sauce over the pork.
5. Cover and cook on low for 8-10 hours, or until the pork is tender and easily shreds with a fork.
6. Once cooked, remove the pork shoulder from the slow cooker and shred the meat using two forks. Mix the shredded meat back into the juices in the slow cooker to keep it moist.
7. Serve the pulled pork on buns, in tacos, or with your favourite sides.

Recipe 4: Garlic Chicken Kiev with Mash and Steamed Veggies

Our Garlic Chicken Kievs make for an effortless yet indulgent dinner. Paired with creamy mashed potatoes and a medley of steamed vegetables, this meal is a comforting classic that’s ready in under an hour.

Ingredients:

2 of The Lucky Pig’s Garlic Chicken Kievs
• 4 large potatoes, peeled and chopped
• 50g butter
• 100ml milk
• Salt and pepper to taste
• 200g broccoli florets
• 200g carrots, sliced
• 150g green beans, trimmed

Instructions:

1. Preheat your oven to 180°C.
2. Place the Garlic Chicken Kievs on a baking tray and bake in the oven for 45-50 minutes, or until golden brown and cooked through.
3. Boil the chopped potatoes in salted water for 15-20 minutes, or until tender.
4. In the last 10 minutes of the potatoes cooking, steam the broccoli, carrots, and green beans until tender.
5. Drain the potatoes and mash with butter, milk, salt, and pepper until smooth and creamy.
6. Serve the Garlic Chicken Kievs alongside the mash and steamed veggies.
